Raised in Okuizumo-cho, Shimane
Born on the Oki Islands. Roaming freely in nature until 7-9 months to build a strong body, then transferred to a ranch in Okuizumo to be finished for 20-22 months in an environment that is as close to nature as possible. Cattle are raised stress-free in handmade wood sheds (many other producers use metal) that surround the animals with a gentle natural scent.
The "beds" of cattle are made of natural soil to release stress on the animals' bodies. Fans are consistently kept on throughout the year to ensure dryness and cleanness of the "beds." Efforts are paid to maintaining a sanitary environment while reducing the number of cleanings to avoid disturbing the cattle's rest.
Three elements define this wagyu: 1. strong and healthy cattle; 2. aging storage; and 3. skills of the craftsmen.
